The indirect cooking smoker oven allows you to create dishes with long cooking times and adding an extra touch of smoke. What does indirect cooking mean? The charcoal/wood is placed in the side boxes, so the food isn't in direct contact with the fire, but rather with heat and smoke, much like an oven. Meat cooked with smoke generates the famous smoke ring, which is a pinker edge on the outer part of the cuts and darker in the center. This is the hallmark of smoked meats. It has the capacity to hold an entire bag of charcoal at once (between both boxes). Once the charcoal is lit, we recommend maintaining it with wood.
